We started growing and selling salad leaves in 2019. The business has developed steadily and we are proud to be widely available in some of the finest farm shops and supermarkets in the North East.
We harvest and deliver to customers within 24 hours, to ensure they can enjoy some of the freshest leaves in Leinster!

Who We Are!
Mark is a 4th generation farmer and has always loved life outdoors. He was helping his Dad and Grandad as soon as he was old enough to tag along. He has been farming ever since. Mark has always enjoyed the challenges that working with the land and nature brings.
In the past 10 years Mark has returned to education completing several agricultural courses and is currently in the middle of a fascinating Masters in Organic Farming via the University of Glasgow.
Helen’s Dad farmed when she was very young. Her tasks as a farmer’s daughter involved mostly the fun stuff, feeding baby lambs and climbing on stacks of bales! In her professional life, Helen has always worked in the world of hospitality, so knows well the importance of customer service and keeping everything organized. Together they make a great team.
How We Grow!
At Coole Farm we grow our produce in harmony with nature. No artificial pesticides or fertilisers are used. This fact, combined with the naturally fertile limestone soil, creates the perfect growing
environment for our very special produce. These ideal growing conditions, along with Mark’s
expertise, allows the natural flavours of the leaves to burst through.
We do not apply artificial fertilisers or any pesticides to our soils because without them, all life is encouraged to flourish.
We maintain our soil nutrient levels by incorporating our crop residues and adding compost, which keeps our soil’s biological life in tip top condition. Plants grown in healthy soils have a much higher nutrient density which in turn are much more nutritious to us when we eat them.
We take great pride in producing our delicious salad leaves to the highest of standards.
